Plum Cake or Christmas Traditional Fruit cake recipe

Plum cakes are actually any cake made with either dried  fruits or fresh fruits.  As per History the traditional Christmas Plum cake comes in existence  sometime in 16th century. The Christmas fruit cake  was evolved from plum porridge and plum pudding. Origin of Plum cake was England but Traditional English style Plum cake recipe  is very famous in all parts of the world but variation can be noticed in fruits so while making this recipe use whatever dry fruits available with you.

In Christmas holiday season we love to spent time together. I think Cooking is the best way to spent some quality time with family. This season don’t buy your Christmas cake from market rather bake it together.

Ingredients for no alcohol Plum Cake :

Sugar – 2/3 cup
Cashew nuts 3 tbsp
Raisins 3 tbsp
Petha / Muraba 2 tbsp
Pistachios 3 tbsp
Red Cherry 3tbsp
Tuti Fruity 3 tbsp
Hot Water – 2/3 cup
Orange Juice – 1/2 cup
Milk – 1/4 cup
Oil – 1/4 cup
Vanilla extraxt – 1/2 tsp
Maida – 1 cup
Milk Powder – 3 tsp
Cardamom, cloves, cinnamon powder – 1 tsp
Baking Powder – 1 tsp
Baking Soda – 1/2 tsp
Salt – 1 pinch

Step 1
Christmas Plum cake recipe

Soaking: Take 1/2 cup orange juice in a bowl. Add Cashew nuts 3 tbsp, Raisins 3 tbsp, Petha / Muraba 2 tbsp, Pistachios 3 tbsp, Red Cherry 3tbsp, Tuti Fruity 3 tbsp in the orange juice. Keep it aside for 1 hours so that dry fruits soak the orange juice.

Prepare Sugar Caramel: Take 2/3 cups of sugar on a dry pan and caramelize on high flame. Stir it properly till the sugar melted and changes the color to brown. Add 2/3 cups of Hot water to make it little thin. You need to cook it for 1 min but do it very carefully. Now switch off the flame and cool it down.

Make the Cake Batter: Take 1/4 cup of milk in a mixing bowl. Add 1/4 cup melted butter or refine oil, 1/2 tsp Vanilla extract then mix it well. Now add 1 cup of Maida or all purpose flour, 3tsp milk powder and mix it well. Add caramelize sugar gradually and mix it properly. Now when it mixed completely Add Soaked dry fruits and again star mixing. This mixing process will take couple of minutes but it's important to mix well. While you are mixing it add 1/2 tsp Baking Soda, pinch of salt and little water.

Make the oven ready: You can do it in convection micro oven or on induction. If you are doing it in micro oven then set the temperature in 50degree and keep it on for 10 minutes and if you want to do it in Induction then take a Kadai and heat it on 500 degree for 10 minutes. Place a stand in the middle of the Kadai so that Cake tin don't get direct heat from kadai.

Plum Cake Recipe

Pour the Batter in Cake tin: You can use cake tin as per your choice but don't use a deep tin because for making cakes it's always good to use a tin where batter can be spread. Pour the cake batter in the cake tin and spread some more dry fruits over the cake surface.

Step 6

Start Baking: Start Baking with 500 Degree centigrade temperature. Bake it for 30 / 40 min. Check the cake with toothpick whether it is baked properly. After it's perfectly baked keep it aside and cool it completely.

Step 7

Your Cake it Ready: When the cake it completely cool bring it out of the cake tin. Your cake it ready for the Christmas celebration.
