Koraishutir kochuri recipe
Koraishutir Kochuri or Motor Shutir Kochuri is one of the most famous Bengali Breakfast recipe specially in winter season. Not only in Bengal we all wait for winter to eat many delicious winter special food and Green Peas-Hing Kachori is one of them. Though frozen Green peas are available though out the year but it’s in winter we all feel the craving for our all time favorite Koraishutir Kochuri.
This recipe will tell you how you can make koraishutir kochuri easily. Koraishutir kochuri is a deep-fried stuffed with a filling of green peas/koraishuti. Koraishutir kochuri also known as motorshutir kochuri a Bengali vegetarian dish which is one of the most beloved breakfast (jolkhabar ) or biyebari-menu items. Serve these hot with aloo dum or cholar dal.
Ingredients:
For the dough:
• Maida / all purpose flour – 2 cups
• Salt as required
• Oil – 3 tbsp
• Water as required
For the filling/matar stuffing :
• Green Peas/Matar – 1 cup
• Green Chilli – 3 pcs
• Salt – 1/2 tsp or as required
• Sugar – 1/2 tsp or as required
• Cumin Powder – 1 tsp
• Coriander Powder – 1 tsp
• Asafoetida/ Hing – a pinch
• Ghee / Clarified Butter – 1 tsp

Making of koraishutir/motorshutir kochuri dough 1. In a mixing bowl add maida, salt and ghee or oil. 2. Mix all the dry ingredients so that the oil mix with the whole flour. 3. Knead it to a soft and smooth dough by adding water gradually. 4. Spread some oil and Cover the dough with a wet napkin and keep aside for 30 min at room temperature.
Making peas/matar stuffing 1. Shell the green peas and take them in a grinder. 2. Add salt, sugar, 2 green chilli, 1 tsp cumin powder, 1 tsp Coriander Powder and a little bit of water. 4. Grind it to a smooth paste. 5. Heat ghee/Clarified butter in a pan. 6. Add a pinch of asafoetida on a low flame. Stir it for 2 to 3 seconds. 7. Then add the ground paste of green peas.Saute on medium heat for 5 to 6 minutes untill the mixture dries out. 8. Stir continuously untill it gathers around the spatula in a lump. 9. Transfer it to a bowl and set aside to cool.
Rolling and Stuffing Koraishutir kochuri 1. Divide the dough into a small sized balls. 2. Put some oil in all the balls so that it doesn't stick to one another. 3. Now take one ball and flatten it with your palm. 4. Stuff the dough with the filling and bring all the edges of the dough and press them together. 5. Roll the stuffed kachori to a circle by applying gentle pressure.
Last step Frying Koraishutir kochuri 1. Heat oil in a kadai. 2. Gently drop the kachori in the hot oil. 3. Apply gentle pressure on the kachori to puff up. 4. When one side is done turn over and fry the other side of the kachori. 5. Fry both sides untill golden . 6. Drain from the oil and serve hot with aloor dum or cholar daal.
