Goja is a very famous Bengali Sweet and over the century Goja holding it’s ranking without changing the original native recipe. Goja mainly originated from old Bengal and Odisha but their recipe are different from each other. Bengali sweet recipes are famous all over India for it’s taste and use of easy to avail ingredients.  Here I am sharing the original recipe of Goja.

Directions
Take 200 ml maida/all purpose flour in a mixing bowl.
Add 1/4 tsp baking soda and mix well.
Then add 4tbsp ghee into the mixture and mix well until the mixture appears crumb like texture
Now add water little by little to make a rough dough. The dough has to be hard and it will have cracks too. We don't need smooth dough for making goja. Cover it and keep aside for 30 mins.
Meanwhile let's prepare the sugar syrup. Take 200ml/1cup sugar and 1/2 cup water in a pan. Bring it to boil.
Add one slice of lemon so that it doesn't crystalize. Once you get one string consistency of the syrup, turn off the flame.
Now place the dough in rolling pan or flat kitchen surface and roll it into a circle shape.
Now take a knife and cut the circle dough into a half circle and further make halves of the half circles.
You have four pieces of dough now. Stack them on each other so again it formed dough ball.
Repeat this process 4 to 5 times to create a layer inside goja.
Finally make a rectangular shape and cut it into the desired pieces of your choice.
For frying heat oil in a deep kadai .
Drop small pieces of dough in it and cook it on a low flame. This is a slow process so It will take time. Cook until it is golden brown.
Once the goja has fried nicely turn off the flame. Transfer all the gojas into a plate and let it cool down a bit.
Drop the goja into the sugar syrup and let them soak for 2 to 3 minutes.
Serve it hot or let them cool and dry out completely.
