Fish Curry
is typically staple with Bengali cuisine and it’s hard to get a Bengali who don’t have endearment for fish. Usually we made fish curry with Katla fish but I made this recipe with Ruhu or Rui because to be specific this recipe is actually Rui macher korma recipe ( রুই মাছের কোর্মা ).
This is not a very easy recipe but I tried to make it simple as much possible.

Clean and rinse 4 piece rohu(rui) fish. Add 1tsp red chilli powder, 1tsp turmeric powder, 1tsp salt and 1tsp ginger garlic paste. Mix well and keep it for 20min.

Heat 2 tbsp oil in a pan in high flame. Fry all the marinated fish in low medium flame.

Flip and fry until golden brown. Don't over cook. Remove from heat and keep aside.

In the same pan add some oil and 1/2 tsp ghee. Add 3/4 cup onion and fry it in a low flame until golden brown. Take out in a plate for beresta.

Now add whole spices and stir until aroma comes out. Then add 1/4 cup sliced onion. Cook for 1 min till it becomes soft.

Add 1/3 cup onion paste and cook until raw smell of onion goes out.

Now add 1tsp ginger garlic paste and 1/2 cup curd. Mix well . Add almond and cashew paste.

Now add 1 tsp coriander powder and 1 tsp kashmiri red chilli powder. Cook for 2 min.
Add little water and cook until oil comes out.

Then add milk powder mixture and mix well. Cook until bubble comes out from the masala.

Add 1 cup water. Once the water boiled add the fried fish and Stir gently. Cook for 1 to 2 min.

Add beresta (fried onion), green chilli and 1 tsp garam masala powder . Cook for 8 to 10 minutes in low flame.

After 10 minutes switch off the flame.

Rohu (Rui) korma recipe is ready to serve.
