For Dabeli Masala : Add coriander seeds, fennel seeds,cumin seeds,black cardamom, star anise, cloves,black pepper,white sesame seeds,cinnamon stick,bay leaf, dry kashmiri chilli,black salt, degi red chilli powder, Asafoetida and dry coconut in a pan. Roast on a low flame for few seconds till the spices turns aromatic. Transfer it to a bowl and cool it down completely. Grind it to fine powder. Now transfer the powder in a bowl .Add peanut oil and sugar. Mix well and keep aside for further use.
For Red Chutney : Soak kashmiri red chilli overnight. Take soaked kashmiri red chilli in a bowl.Add garlic cloves, salt, sugar and kashmiri red chilli powder. Transfer it to a grinder and grind it for few seconds. Then add peanut oil , peanuts and little water.Grind it to a smooth paste.Transfer the paste into a bowl and add water to make it thin. Keep aside for further use. For peanut masala : Add roasted peanut and dabeli masala in a bowl and mix well. Keep it aside for further use.
For onion mixture : Add some roughly chopped onion , green chilli,coriander leaves and some lemin juice in a bowl. Mix well and keep it aside for further use.
For Filling : Take boiled potato and mashed them well in a plate. In a pan add peanut oil and dabeli masala and mix well. After few seconds add mashed boiled potato and little water. Mix well and cook on a low medium flame until the masala mix completely. Transfer the masala into a plate and let it cool down to room temperature. Now spread masala peanut, onion mixture, sev and pomegranate pearl on the top of the potato mixture.

For Assembling : At first slit the pav in the center then add tamarind chutney in one side of pav and red garlic chutney on the other side. Put aloo mixture in the middle of the pav. Roll the dabeli into sev. Then add butter in a non stick pan and toast the pav from all sides. Toast untill light brown in a low flame. Garnish it as per your choice and serve hot.
