Chicken Biryani|Simple and Easy Chicken Biryani
It is the most delicious and royal recipe made on all kind of festivals or occasion. Chicken Biryani recipe is made with rice and chicken with a layer of chicken, rice, fried potatoes and Beresta(fried onion) that are steamed together.

To Marinate Chicken Take 500 gm chicken in a bowl. Add 1tsp ginger paste,1 tbsp garlic paste,1/2 tsp red chilli powder,1 tsp salt and 4tbsp curd. Mix it well n keep aside for 15 to 20 min.
To cook the Rice Take one handi / heavy bottom pan & add water. Place it on high heat. Add Black cardamom - 1,Green cardamom -2, Bay leave - 1, Cloves - 2, Cinnamon- 1 pieces and Salt- 2 1/2 tablespoon (two and half tablespoon).Once the water starts boiling, add the strained basmati rice & stir it well. Continue to boil it on high heat. After 10 minutes when the rice is done remove it from heat and strain the water. Keep aside.
For beresta fry some sliced onion till golden brown and keep aside.
Now let's prepare the chicken. Heat 4 tbsp oil in a heavy bottom pan and add the spices. When the aroma comes out add sliced onions
Fry on high heat for around 10 mins till the onions are light brown.
Add the ginger garlic paste and fry on low heat for 2 mins.
Add the onion paste and fry for 1 min. Add salt and red chilli powder as per taste.
Now add the chicken pieces, mix and fry on high heat for 2-3 mins.
Add the ready made Biryani Masala, mix and fry on medium heat for 3 mins after adding a splash of water.
Add garam masala powder. Cook on low heat for 2 mins till oil separates.
Add kewra water to add flavor in it. Cover & cook on low heat for around 15 to 20 mins till chicken is tender. Cook until you get a thick gravy. Chicken is ready.
Last step is Layering the rice and cooked chicken. In a small bowl take 1tbsp milk. Add pinch of orange food color and 3-4 drops of essence. Take 2 tsp ghee/clarified butter and Mix it
Now Take a heavy bottom pan and spread half the cooked rice as the 1st layer. Spread some ghee/clarified butter and 1tsp milk mixture.
Now spread the cooked chicken with gravy on top of the rice uniformly. Add the fried potatoes.
Spread the balance rice as the top layer and beresta(fried onions). Close the lid and cook on low flame for 5 min. Serve hot after 15 minutes.
