Chicken Bhuna Masala Is one of the famous North Indian Chicken recipe. Panjabi Chicken recipes are always very aromatic and full full spices. Bhuna means roast. We call it  Bhuna Masala because we roast all masalas like coriander seeds, black peppercorns , black cardamom, green cardamom, cloves, cumin seeds and crushed kasuri methi.

Ingredients:

INGREDIENTS FOR CHICKEN MARINATION:
• Chicken – 700 gms
• Salt as per taste
• Turmeric Powder – 1/2 tsp
• Coriander Powder – 1 tbsp
• Ginger Garlic Paste – 1 tsp
• Red Chilli Powder – 1 tsp
• Hung Curd – 1 tsp (or you can use lemon juice)
INGREDIENTS FOR MASALA:
• Coriander Seeds – 2 tbsp
• Cloves – 2 to 3
• Cinnamon Stick – 1/2 inch
• Black Cardamom – 1 no
• Green Cardamom – 2 nos
• Dry red chilli – 1 no
• Cumin seeds – 1 tsp
• Kasuri Methi – 1tsp
INGREDIENTS FOR BHUNA CHICKEN:
• Refine Oil – 2 tbsp
• Ghee/Clarified Butter – 1 tbsp
• Black Peppercorns – 3 to 4
• Cloves – 2
• Cumin seeds – 1/2 tsp
• Onion – 3 big chopped
• Curd – 1 tsp
• Prepared Masala – 2 tbsp
• Bhuna Chicken
• Water
• Salt as per taste

 

Directions

Step 1

Marinate the Chicken : 1. Take 700 gms chicken in a large bowl. 2. Add turmeric powder, salt as per taste, coriander powder, red chilli powder, curd and ginger garlic paste . 3. Mix it well and keep aside for 20mins.

Step 2

Making the Masala : 1. Take a pan and add coriander seeds, black peppercorns , black cardamom, green cardamom, cloves, cumin seeds and crushed kasuri methi. 2. Dry roast on a low flame for 1 to 2 mins untill it turns aromatic. 3. Cool it and transfer it to a grinder jar .Make a fine powder and keep aside for further use.

Step 3

Frying Chicken: 1. Add 1 tbsp oil and 1 tsp ghee or clarified butter in a pan. 2. Once it is hot add marinated chicken pieces and fry all the sides properly. 3. Take out the chicken pieces in a plate.

Step 4

Cooking Bhuna Chicken: 1. In the same pan add 2 tbsp refine oil and 1 tbso ghee or clarified butter. 2. Add black peppercorns, cloves, cumin seeds. 3. Add chopped onion and saute for 2 to 3 mins till it turns golden brown. 4. Cover and Cook for 1min. 5. Open the lid and stir it well . 6. After it turns golden brown add fried chicken and mix it well. 7. Add salt as per taste.Cook for 4 to 5mins on medium flame. 8. Add 1 tbsp curd and 2 tbsp prepared masala. Mix it well . 9. Cook for 2 to 3 mins on a low medium flame untill the chicken cooked well. 10. Once the chicken is nicely cooked turn off the flame and serve hot. 11. You can garnish with coriander leaves.
