Chanar Payesh Recipe

Among many Bengali sweet recipes this is one of my favorite recipe. Traditional Bengali sweets are always famous in entire India.
Here I have shared a easy recipe for chanar payes which is made with paneer or cottage cheese with thick milk mixture. I have used homemade paneer which is made with 1ltr of full cream milk for this and  I have used Amulspray to make thick creamy milk mixture. For garnishing I have used Almond, Cashews and Pistachios but you can skip this if you are not a dry fruit lover.

In West Bengal and Bangladesh this sweet dish is famous as Chanar payes but in other part of India people call it Cottage cheese pudding or Paneer kheer but recipe is almost similar.

Step 1

Take 1 liter full cream milk in a pan and bring it to boil.

Step 2

Take out 5 tsp milk in a small bowl. Add 4 tsp milk powder into it and mix it well. Keep aside.

Keep stirring in between. Boil it in a low flame till it becomes half and creamy.

In the meantime, take chenna (made from 1 ltr milk) in a plate. Crumble the paneer and add 1 tsp sugar.

Mash the paneer with the help of your palm until it becomes smooth and soft.

Take small portions of paneer from the dough and make smooth chenna dumplings. Make it smooth so that no cracks should be there. Keep it aside.

Milk has now reduced to half. Add milk powder mixture and stir well then add 1 cup of sugar and mix well. Add chopped almond, pistachios, cashews and 1 cup of sugar. Add 1/2 tsp of cardamom powder and Mix well.

Add saffron milk mixture (add few strands of saffron into 2 tsp of milk).

Keep stirring at regular intervals so that the milk not burnt. Once the milk becomes thick and creamy add the paneer balls. Cook for 4 to 5 min in a low flame.

After 5 min turn off the gas and keep it aside. Cool it completely and serve.You can refrigerate it too for 1 to 2 hours to serve chilled.
